So it's complete - my first Iron Cupcake has been baked :D
When I thought of the challenge I knew I didn't want to go for anything as basic as just throwing a tablespoon of chili powder in and moving forward - this was the perfect time to get creative and go for it.
Oddly what came to mind was Mole. The mexican/south american savory sauce made of chocolate, chili, and ground nuts among other things. The other thing that came to mind is the vivid colors that chili peppers are known for. When I think of vibrant cupcakes red velvet immediately comes to mind. Two titles for the cupcakes also came to mind - Ole Mole or Red Hot Chili Cupcakes - my WoW guild voted for Ole Mole.
Before constructing the recipe I did some research on Mole and found that in Guatemala they make a mole using plantains (the savory cousin of the banana) which gave me the idea of using a cinnamon banana filling. And when I think of Red Velvet I immediately think of cream cheese frosting so that was a given :)
Overall I'm extremely happy with how these cupcakes turned out. Their texture was perfect and the whipped filling delicate enough to not overpower. There's also a nice kick afterward which I found an added bonus!

Hi, I'm getting married in Lawrence a little over a year from now...I know its a little early, but we are planning on having cupcakes at the wedding and were wondering if you were going to have your cupcakery open by then, and even if not, would consider making them for us.
